Roasted Tomatoes
As home gardens begin to overflow with tomatoes, so is our food reservoir, and the community is loving it! So we decided to share a tasty and fresh recipe that every tomato lover will enjoy! Not only that, it’s literally a 5 minute dish to whip up.
Roasted tomatoes are a super quick and easy dish that screams summer time! These cheesy, mozzarella and Parmesan tomatoes are jam packed with flavor and are so incredibly delicious.
You can never really go wrong with a fresh picked tomato, a little bit of cheese and some flavorful herbs to top it off, so grab these 5 simple ingredients to create this colorful dish that will be a family favorite, or the hit of you next neighborhood gathering.
Ingredients:
1. 8-10 Fresh Tomatoes. Cocktail, Roma, or Grape tomatoes work the best!
2. 1 Cup Mozzarella Cheese
3. 1/2 Cup Parmesan Cheese
4. Basil(optional) chopped
5. Olive Oil
Instructions:

Preheat oven to 400 degrees

Wash and half tomatoes on a cutting board and place on a parchment lined baking sheet

Add mozzarella(fresh or shredded) and Parmesan to the top of each tomato

Lightly drizzle tomatoes with olive oil

Sprinkle with fresh basil

Bake in the oven at 400F for 10-12 Minutes
